Mexican pizza is one of those meals that feels like we’re getting takeout without actually getting takeout.
Which automatically makes it a win.
I made these on prep day because I already had ground turkey out for the shell noodle pasta. Instead of putting the leftover meat back in the refrigerator and figuring out what to do with it later, Mexican pizzas it was.
You can use ground turkey or ground beef. Whatever you have works.
What You’ll Need
– Small tortillas
– Ground turkey or ground beef
– ¼ onion, diced
– Taco seasoning
– Shredded cheese
– Taco sauce or enchilada sauce
– Cilantro, for serving
I’m not giving you an exact amount of meat or cheese here because this is very much a build-as-many-as-you-need situation.
Cook the Meat
Brown your ground turkey or beef with the diced onion and taco seasoning.
Cook everything together until the meat is completely cooked through and the onion has softened.
Then you’re ready to build.
Get the Tortillas Crispy
I like my tortillas crunchy for these.
You have options here.
I will either fry mine or throw them in the air fryer until they’re crispy. You can also bake them if that’s easier.
The important part is just getting some crunch on them before you start building your pizzas.
Nobody wants a sad, floppy Mexican pizza.
Build Your Mexican Pizzas
Now layer everything:
Tortilla → meat and onion mixture → cheese → another tortilla → taco or enchilada sauce → more cheese.
That’s it.
Put the assembled pizzas on a baking sheet and bake until everything is heated through and the cheese on top is melted and bubbly.
Top them with some cilantro when they come out of the oven.
Then cut them up and serve.
An Easy Prep-Day Meal
These are especially easy when you’re already cooking ground meat for something else.
That’s exactly what happened to me.
I needed ground turkey for another recipe, had some left over, and just kept going. Part of prep day for me is trying to use what I already have out instead of creating seven containers of random leftover ingredients that I’m definitely going to forget about.
And Mexican pizza doesn’t feel like eating leftovers.
It’s crunchy. It’s cheesy. Everybody can customize theirs if they want to.
It feels a little like takeout.
Except I didn’t have to pay takeout prices to feed everybody.
I’ll take that win.
