I decided to switch up our chicken meatballs this week and make them hot honey.
And I am very glad I did.
These are another really easy prep-day meal because you can make a batch, throw them in the refrigerator, and warm them up whenever you need them. Add a vegetable, rice, potatoes, whatever you have, and dinner is handled.
This recipe makes around 15–18 meatballs, depending on how big you make them.
What You’ll Need
For the Chicken Meatballs
– 2 pounds ground chicken
– 1 large egg
– 1 cup Italian breadcrumbs
– 3 cloves garlic, minced
– 2 teaspoons paprika
– 2 teaspoons onion powder
– 2 teaspoons garlic powder
– Salt, to taste
– Black pepper, to taste
For the Hot Honey Sauce
– ¼ cup hot honey sauce
– 1½ tablespoons butter, melted
– ½ tablespoon Dijon mustard
Make the Meatballs
Add the ground chicken, egg, Italian breadcrumbs, minced garlic, paprika, onion powder, garlic powder, salt, and pepper to a large bowl.
Mix everything together until it’s combined.
Then form the mixture into meatballs.
You should get somewhere around 15–18, but obviously that depends on the size of your meatballs. If you want them smaller, make them smaller. Nobody is measuring your meatballs.
Heat a skillet and cook the meatballs, turning them as needed, until they’re browned on the outside and completely cooked through in the center.
Once they’re done, remove them from the skillet and put them into a large bowl.
Make the Hot Honey Sauce
This part could not be easier.
Mix together:
– ¼ cup hot honey sauce
– 1½ tablespoons melted butter
– ½ tablespoon Dijon mustard
Pour the sauce over the warm chicken meatballs and toss everything together until every meatball is evenly coated.
And you’re done.
Sweet, spicy, buttery, and just enough Dijon to give the sauce a little something extra.
For Prep Day
If you’re making these ahead like I did, let them cool and put them into an airtight container in the refrigerator.
When you need them later in the week, warm them back up and serve them with whatever makes sense that day.
That’s one of the reasons I like meatballs for prep day. I don’t necessarily have to decide today what the entire meal is going to look like later.
I’m just making sure that when later gets here, I’ve already done the hard part.
And Future Me can figure out the side dish.
