
It was another Monday evening.
I was tired, and the kids were hungry. Shockingly enough, the kids did not care that I was tired. They only cared that they were hungry.
So… Supermom had to put on her cape and complete the mission.
Tonight’s dinner wasn’t anything fancy.
It was leftovers.
On Saturday, I had cooked with Monday in mind. I knew there would come a point this week when I wouldn’t want to cook from scratch, so I tried to help my future self out a little.
I had made two turkey breasts that I usually slice up for sandwiches. Some of the slices always end up a little too thick for sandwiches anyway, so tonight they just became the main dish.
I had also thrown a turkey leg, potatoes, and green beans into the crock pot on Saturday. By the time it was finished, there wasn’t much turkey left—my husband had already taken care of most of that.
Thankfully, the potatoes and green beans were still there waiting on us.
So that was dinner.
Turkey breast.
Potatoes.
Green beans.
Nothing fancy.
Nothing restaurant-worthy.
Just food that filled six bellies.
And honestly, sometimes that’s the goal.
Motherhood has taught me that dinner doesn’t always have to impress people. Sometimes it just has to feed the people you love.
