As the school year starts rolling along and school isn’t quite as exciting anymore, I always find myself struggling to come up with lunch ideas.
The kids get tired of the same basic lunches I send.
Honestly… I get tired of making them too.
So every now and then, I try to think of foods they’d normally eat at home that can also fit inside a lunchbox.
This is one of those recipes.
They’re little mini pizzas about the size of a biscuit. They’re easy to make ahead, easy to keep in the refrigerator or freezer, and easy to grab on those mornings when I don’t feel like thinking about what to pack.
What took about 45 minutes to prep on a Saturday took less than five minutes to pack on a weekday. Future me appreciates it every single time.
Recipe
Ingredients
- Pizza dough (I use the Member’s Mark pizza dough from Sam’s Club.)
- Pizza Sauce
- Italian Cheese (I buy the Walmart brand)
- Whatever toppings your family likes
Directions
- Let the pizza dough thaw.
- Then cut it into slices just like you would a cinnamon roll.
- Take each slice and roll it up individually, just like you would a cinnamon roll.
- Place each roll into a greased muffin pan and gently press it down into the bottom. I do not flatten mine completely. I just press them enough so that the spiral isn’t sticking up any more.
- Once you’ve filled the muffin pan, add about a table spoon of pizza sauce to each on. You can add more or less depending on what your kids like.
- Sprinkle italian cheese over the top. The add whatever toppings you like.
- Bake at 350 until golden brown and cheese is bubbling.
Notes
Store the leftovers in the refrigerator or freezer, then reheat when you’re packing lunches throughout the week.
