The Meal That Let Me Leave the Kitchen

We recently had a family gathering, and I was in charge of all the food.
After thinking about it for a while, I decided to go with barbecue. I mean… you really can’t go wrong with barbecue. Or chicken, for that matter.
So I made pulled BBQ chicken in the crockpot.
And let me tell you…
If I’m ever feeding a crowd, my crockpot is almost always involved.
I honestly don’t know how people cook for a bunch of people without one. Maybe they have more patience than I do.
Anyway, this recipe is one that I kind of curated by accident. I watched a handful of recipes on social media, took little bits from each one, and somehow ended up with this. Honestly, that’s how a lot of my cooking happens.


Basically, I put about 2 pounds of chicken in the crockpot. Simple enough. Then I added salt, pepper, garlic powder, onion powder, paprika, and Kinder’s Hickory BBQ Blend seasoning. Once all of that was on the chicken, I poured the Kinder’s Hickory BBQ Sauce over the top. Then, because I hate wasting barbecue sauce, I filled the bottle with a little water, put the lid back on, shook it really well, and poured that into the crockpot too. I feel like there’s always enough sauce left in the bottle to be worth doing that.
Then I let the crockpot do the magic.
I cooked it on low for about six hours, shredded the chicken, mixed everything together, and… voilà!
You can serve it on hamburger buns for BBQ chicken sandwiches, or my personal favorite, on top of a baked potato.
It ended up being such an easy meal for a large group of people.
Honestly, if someone asked me for an easy recipe to feed a crowd, this is probably the one I’d give them.
You can make more or less depending on how many people you’re feeding. Add another package of chicken, another bottle of sauce… it’s really forgiving.
And that’s one of the reasons I like it so much.
It’s simple, it feeds a lot of people, and it lets me spend more time with the people I cooked for instead of standing in the kitchen.

Now… Here’s the recipe:


Crockpot BBQ Pulled Chicken


Ingredients


2 pounds boneless, skinless chicken breasts
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 tablespoon Kinder’s Hickory BBQ Blend seasoning
1 bottle Kinder’s Hickory BBQ Sauce (about 15–18 ounces)
About ¼ cup water


Directions


1. Place the chicken in the crockpot.
2. Sprinkle the salt, pepper, garlic powder, onion powder, paprika, and Kinder’s Hickory BBQ Blend over the chicken. Rub the seasonings around a little so everything is coated.
3. Pour the entire bottle of barbecue sauce over the chicken.
4. Fill the empty barbecue sauce bottle with about ¼ cup of water, shake it really well, and pour that into the crockpot too. I hate wasting barbecue sauce, so I always do this.
5. Put the lid on and cook on Low for about 6 hours.
6. Once the chicken is fully cooked, shred it with two forks right in the crockpot and stir everything together.
7. Serve on hamburger buns for pulled BBQ chicken sandwiches, over baked potatoes, or however your family likes it.


Notes:
This recipe doubles really easily if you’re feeding even more people.
If your family likes extra sauce, add another bottle after you shred the chicken.
